Yes, I am surprised that no one has nominated Water. Of course it is a subset of Nature but water play has enormous potential. We have devices that Eric mentioned from Richter Spielgeräte GmbH, in Frasdorf, Germany (they are robust, extremely well made and despite high cost economical in that they will last a looooong time. I'd venture to say indestructible in a musuem setting).  Sand and water go well for children to create stream beds and dams. These may be more acceptable out of door than indoors. Water has another advantage that can be a money earner: coin operated driers that parents can use to dry their children's clothing :).
