Global uses soy and yeast and pollen for their patties for California.  This 
has proven cheap, effective, and popular.  They also make custom recipes to 
order.

Other sellers use various ingredients, based on yeast AFAIK.  Some 
ingredients are secret, and some are questionable, like large amounts of 
oils and some salts.

Last I heard, some of the large beekeepers just use yeast and sugar.
