Not really as the HMF levels increase with time and temperature and are good
indicators how fresh/old honey is and the temperature history. Honey from
tropical countries or blends thereof are permitted to have 80ppm whilst citrus
honey has to be below 15ppm! Beekeepers here in Cyprus have been taken to court
and paid hefty fines for HMF levels higher than the limits set for table honey.
The honey should have been labeled as confectionery honey to get around the
problem. High HMF levels are a problem in Cypriot honey because of the long hot
(often over 40C) summer.
