NY Hall of Science exhibits on microbes are great; also they have an
exhibition on the molecules of life.
JFK Health World (Barrington, IL, I think) might have some interesting
exhibits; it was designed by Jeff Kennedy Associates, who you might want to talk
to to find out wazzup with health exhibits these days.

You might want to check out traveling exhibits, like Grossology, to steal
some good ideas.
The Exploratorium, of course, has designed a number of exhibits on biology,
memory, vision, hearing, health, etc.
HealthSpace is a new health museum in Cleveland (used to be the Health
Museum). Haven't seen it, but it might be instructive -- don't know if it is
