We made a test batch in a large aquarium tank about 8" deep and left it overnight to see if we could re-use it the next day. The issue wasn't evaporation, as much as separation. By morning, the Oobleck had separated dramatically, with about 1" of just water on top and the cornstarch packed densely below. Re-mixing it proved impossible.

So another question regarding our oobleck walk.....how well will that large of amount of oobleck stay if we make it the night before our event? I am assuming that if dried out at all we could just add some water to get it back to right consistency. Anyone have experience with this?

We did an oobleck run last year with a trough that was 1 foot deep and 8 feet in diameter. The distance across was about right for the folks who moved quickly. For those who hesitated, the large diameter meant that our rescue crew had to step in quickly or risk losing people. Don't do more than 1foot deep. Don't.
The math yields ~50 cubic feet, or a bit less than 2 cubic yards, which we achieved with 2000lbs--40 bags--of cornstarch.
