Reply: I didn't think there were any real issues. However, I am currently in Malta and visited the Ministry of Agriculture. Their honey has to be under 40 mg per kilo. Current work is trying to get that level raised to 80 mg. Any honey stored here during the hot summers tends to achieve highter HMFs.
