Canola honey is a hard sell to packers in the U.S. due to the short shelf
life factor. When honey is in short demand ( now) then packers still buy but
use 2 barrels of canola to 6 to 8  barrels of *slow to crystallize* honey to 
get
shelf life. (source local packer).

He said even filtered and pasteurized canola honey has a short shelf life as
opposed to all other honeys.
