Here's a question: As honey is heated to re-liquify and reverse granulation, the HMF levels will increase. Is this a problem for human consumption? Do the HMFs (which have been shown to be deliterious to honeybees) pose a threat to humans?
If so, what levels pose a threat? What levels are considered safe?
