How temporary are you talking? If this is really just a one time use while the new gallery is being constructed then you might find sheet rock and metal studs the lowest cost. If you are looking for something to use over many years then a system like the mila-walls could be a great investment. But they ain't cheap! The great advantages of those systems are their light weight and modularity. But make sure you get all the components you want up front while you have the cash.
As far as height goes think in terms of where will you store them when not in use. For blocking sight lines 8 feet would be more than enough and serve most exhibit needs.
