No one else seems to be answering this Grant, perhaps because we recently
discussed. Humans appear to handle HMF well--we have a long history of
heating, cooking, or sun drying acidic, sugary foods. Jam, dried fruit,
coffee, etc have high HMF.
Likely not worth worrying about.
