Let the building begin...
Big ups to The Louisville Science Center's "World We Create" exhibit,
especially the big crane model and the 3-d ball-rolling part made of pvc
you could attach to a frame. Dunno if this is what you meant by "water",
but I also loved their "Go H2O", a waterless "stream table" that used
balls as a model for how water moves + is used in its cycle.
Definitely check out Liberty Science Center's skyscraper exhibit. While
capacity was a bit of an issue, particularly good parts were the beam
walk and the "curtain test lab" (the latter exposes you to 100 mph
winds!)

slime that went along with it."

We are planning a new Engineering-themed exhibit space at our science
center. Please give any of your suggestions, or even a list, of your
'favorite' interactive exhibits of all time with an engineering
focus...for any of the following topics -- water, energy, aviation,
architecture and waste.
We are looking to have 5-6 exhibits in this area. I appreciate any and
all shared input.
