Those photos brought back some fond memories! We designed that exhibit a good while ago.Those valve assemblies and virtually all the acrylic work in the photographs was custom milled by A&M Models and they've unfortunately been out of business for more than a decade. Many of the moving parts were taken out of off-the-shelf pumps and valves and modified to work in custom housings.
As suggested, those valves should be easy to open and hopefully replacement parts either purchased or fabricated.
