For those interested, here were the responses to my query to the listserv about activities for teaching about risk. Thanks to Michele Kloda, Kimberly Kuta and Bob Russell!
1. I've had success using the NIH curricula as a launch point for activities and discussions with middle and high school students about risk: http://science.education.nih.gov/customers.nsf/WebPages/CSHome
Also, SEPUP curricula generally include introductory information about risk and risk assessment. It depends on your audience and your topic.
2. Project Learning Tree has an Exploring Environmental Issues: Focus on Risk curriculum for grades 9 - 12. Activities center around defining risk, understanding probability, communicating risk, weighing options and making decisions.
3. I think the Ft. Worth Museum of History & Science produced a traveling exhibit on risk; they may have designed some activities and the exhibit might suggest ways to introduce risk.
