Often colleges and universities that offer GIS courses also offer the 2-3 day "quick start" ESRI courses, check out the geology and geography departments at nearby schools.  It's the quickest way to get an intro to GIS.  The short courses are particularly good if you don't have the time/resources to take a full semester course.
