i'm guessing more people had chickens in their backyards even in urban 
areas; and would raise them for eggs, even when they didn't eat the chickens 
themselves...
after that, there were poultry shops/stalls in the markets; i remember a 
place in toronto with geese hanging in the window, still with their feathers
