not so much blue and red, as dark red ( non-oxygenated) to bright red -oxygenated.
The "blue" veins is mostly the colour of the vessels + a little contribution from the darker red -slightly more purple de-oxygenated blood.
in some animals ( crustaceans) the haemoglobin uses cobalt not iron and they have electric light blue tinted blood....
