We've been going through similar research lately. The main problem we've run into, other than price of sustainable carpet, is that it also has to comply with Class 1 Fire Resistance standards set by building codes.
We've found carpets that comply to building codes, and are certainly more Earth-friendly than they used to be, and even those that are glued down use "extremely low VOC" glue. But it seems a far cry from sustainable, and getting at the real info (as opposed to sales hype) has been difficult and time consuming.
I'll be interested in what others come up with -
