Dear Jenny,
A good place to look for literature on behavior change is in
environmental education research. Looking at how teachers facilitate
adoption of responsible environmental behavior in their students
after informal science programs is part of my research and I've found
a lot of background information in the ERIC database. Harold
Hungerford et al have proposed models of how this process might
happen. Unfortunately, from the exhibit (i.e. short-term exposure)
perspective the current thought favors multiple exposure over a long
term, with a healthy dose of affective development. You are
venturing into an area that has no real answers yet - but a good
number of people are working on it. In addition, as someone
mentioned earlier, measuring behavior change must be done over time
which is a big challenge for those of us in the informal education
