Five years ago, I did a master's project studying the impact of a zoo (not museum) exhibit on behavior change. We surveyed people once they exited the exhibit and then again by phone 6 months later. We did a poster presentation at VSA in 2003, and our report (which I'm guessing has the instruments we used, but I'm not sure - it's a big file to download) is online:
