The crystals form quite rapidly.

You definitely should use the ammonia.  When I've done this in the
classroom, I just mix up the solution in a big plastic bottle and keep
shaking it up.

I give each student a disposable cup with some crumpled up paper towel
inside and pour the crystal solution in.
