Again a plug for your local community college.  Most are likely to offer GIS classes as well as GPS classes.

How about ARCVIEW classes?  There used to be seminars at SHA and SAA, but
since I decided to take one, they have disappeared from all conference
agendas. Any idea why?    Any chance someone will hold an ARCVIEW workshop
for archaeologists in the near future?  Any idea how a non-university based
archaeologist can gain enough basic training to learn by doing?

course every month or so.

I'd suggest a local community college.  Such a course might be offered by
the geography department, or it could be in the community education
(non-credit) realm along with outdoor recreation classes.
