Start with these two:
Ries, Heinrich and Henry Leighton 1909 History of the Clay
Working Industry of the United States. J. Wiley and Sons, New York.
Gurcke, Karl 1987 Bricks and Brick making: A Handbook for
Historical Archaeology. University of Idaho Press, Moscow.
Ries has a basic overview of production of different types of brick.
Karl Gurcke's book is the basic bible for bricks.
Then you can move to:
McCollam, C. Harold 1976 The Brick and Tile Industry in Stark
County, 1807-1976. The Stark County Historical Society, Canton, OH.
McCollam has a detailed discussion of brick production in Stark
County, including the Metropolitan company which was one of the
country's leading manufacturers of brick pavers.
