How three dimensional are you thinking?
there are many "assembly", "stacking" and "packing" type puzzles that have
proved themselves as good exhibits, and at the right scale can foster group collaboration.

exponential stacking (tipping) blocks.

Techniquest in wales developed a great collection of puzzles at large scale
Puzzlequest.. they may have some details on line.. we worked with them and developed versions for ourselves. you can see some of these on our web site

you can also look at any puzzle sites and get ideas for puzzles that could be scaled up ( if you think a bigger scale is of use -certainly helps NOT loose the pieces and encourages groups).
