You may get some ideas if you google "physics of football." You will get a number of hits and may get some ideas that can be adapted to baseball. There are a couple traveling football exhibits; NSTA has some demos on the physics of football; the University of Nebraska has done physics of football demos in its stadium at halftime with about 80,000 football fans present.

A great demonstration or participative experiment would be to set up a gadget that flings fast-spinning table-tennis balls, which will then fly in a spectacularly swerving path.
You could also use real baseballs but you'd need more space, closer observation (because they swerve less) and considerable safety precautions...!
