Jonah, I basically do agree with you, but on the other hand, your 
organization is getting $$ and the granting organization has to have 
some way to show it was money well spent.  

So...How about concept maps?  Pre and Post.  More open-ended than a 
quiz, still assessing content knowledge, and connections.

Or you could do an attitudinal assessment as others have suggested-- at 
the beginning of the whole 10 session series, and one after.  Have the 
kids use Mo. and Day of Birth or some such for an ID-- then you can 
compare pre/post responses. If you do a Likert scale style instrument, 
it's a lot less work, but still a rigorous "analyzable" assessment.

You could make Bar Graphs! Pie Charts!
