I've read that the late professor Roger Morse advocated using single
deeps with excluders, too.

This set-up keeps the bees trying to establish a honey dome above the
broodnest for survival. With this number one priority not met,
reproductive swarming (priority number two) is not initiated.
I guess I'd like to try this set-up one day for comparison although I
agree with you that juggling those heavy medium supers is no fun.
