How about:

"Science is a way of figuring out how things happen, and why they happen."

For teenagers, I would use "modeling" instead of "figuring out." but I
think that would be too much for 7 year olds ...

I had the privilege of meeting Edward Teller once;  he would object
strongly to the notion of modeling, and (I think) use "explaining."
