You should take a look at Mary Beaudry's new book, Findings:? The Material Culture of Needlework and Sewing (Yale).? There is an entire chapter, accompanied by illustrations, on scissors and shears that date from the Middle Ages to the 19th century, and the book is intended to assist archaeologists to identify these types of artifacts in the archaeological record.

A pair of scissors has been excavated from a Historic Period Native
American Site in Connecticut. We have not been able to date them. I
