Marie-Lorraine Pipes has authored many faunal reports for a variety of CRM
firms in the northeast that contain a wealth of information.  Her reports
are well written and have graphics which show cuts of meat and discuss the
economics of the cuts.  I would suggest contacting her at [log in to unmask]
You may also want to look at the free DELDOT series which has several
reports by the University of Delaware which have good faunal sections.
Other books you might want to include are:

I am trying to pull together a bibliography for food in historical
archaeology both site reports that deal with ways in which historical
archaeologists look at foodways in the past and books that talk about the
archaeology of food.
