There is a world of difference between freezing wet things and freeze drying
frozen things. Let me explain. When you place soggy wet documents in a meat
locker, the water turns to ice crystals. When you place frozen documents in a
freeze drier, the ice turns to vapor and blows away in the machine. Try to think
of photos of one of those really high mountains with snowy peaks, where vapor
blows off the top. The vapor is ice that is converted by very low
temperatures to gas and is carried away on the wind. What is left in a freeze drier is a
dry document. This is your goal with wet soggy documents is to freeze the ice,
then vaporize it from the document.
