I don't know what type of event (day, night) or time of year you're looking at,
but consider contacting some of these places to see what they may offer.

Las Vegas Natural History Museum
Las Vegas Art Museum
Lied Children's Museum
Shark Reef at Mandalay Bay
Liberace Museum (what most expect in Las Vegas)
Azure Restaurant and Lounge at the Silverton  (huge aquarium with a "Cirque du
Soleil" style mermaid show - only in Las Vegas!)

If you're looking for something incredibly unexpected away from the glitz of the
city:

Mount Charleston Hotel and Lodge (a quaint lodge in an alpine setting 20-30 mins.
away from most hotels)
Red Rock Canyon Visitors Center (beautiful desert panoramas 20-30 mins. away from
most hotels)
Spring Mountain Ranch (old western feel 20-30 mins. away from most hotels)

There are also some restaurants on Lake Mead (about 40-60 mins. away from most
hotels)
