Check out Chesapeake Classrooms Online Community:
http://www.ngsednet.org/community/index.cfm?community_id=151
(free registration), and CBF's online publications www.cbf.org/publications
-- education activities are about 2/3 of the way down the page. Also check

All of these have a mid-Atlantic slant, of course.
For Bodies of water and public health, a segment of the "Invaders" episode
of National Geographic's series "Strange Days on Planet Earth" talks about
invasive water hyacinth in Lake Victoria and the diseases that spread as a
result. The web site: www.pbs.org/strangedays - besides the videos for
purchase, there is an educator's guide available on the site that may have
useful activities. I have used the activities about invasive species, though
no activities that connect the species to health problems specifically (the
story is told in the video).
