My initial thoughts are hydrogen fuel cell and power generating system
using biomass (disposal materials or crops, like Back to the Future II).
Depending goals and cost of the exhibit that you have in mind, an idea is
to develop a battery using those resources and try to make a motor move.
You can also compare cleanliness of exhaust from various sources. If what
you have in mind is workshops, you can have participants make hydrogen
fuel cell (This really depends on the cost, since palladium chloride is so
expensive).
Especially hydrogen fuel cell technology is developing remarkable, and a
research institute has open in UC-Davis.

There should be the way to design the exhibit hands-on, though.
