Did you mean crystallize, and not ferment? I don't believe either will ferment.

Well, you could do what we do in Vermont. Several beekeepers go in together
on a load, and they fill our honey drums off their trailer. I believe we
bought about 30,000 lbs last year. You would have to figure out what the
minimum load is delivered to your unloading location, find enough
beekeepers to handle it, and make sure everyone shows up with a check :-)
