This is what I read too, so I put my honey in a deep freeze. Three years
running the honey started to crystallize after five or six months of being
frozen. Granted it is quite soft when warmed to room temperature, but the
texture is very fine. Go figure. The same honey kept in normal unheated
storage crystallizes as one would expect.
