ILVS Review: A Journal on Visitor Behaviour
These journals tend to deal with industrial environments and you might find something of interest, not specifically related to museum exhibits:

Applied Ergonomics

I have the philosophy that there must be a journal for every nook and cranny of a subject. I have even stumbled across a journal about marketing to children! Scary.
Jakob Nielsen www.useit.com and WIRED magazine www.wiredmagazine.com have some useful thoughts and hints on how people operate with technology and online environments.
There are also books/reports published by individuals and institutions regarding human factors and exhibit development.
