Ecosystems are always great. If you want to get philosophical, there are lots of cultural lessons to be learned with ecosystems as well (everyone has a unique role to play, we can't survive on our own, etc).

One of my favorite concepts for environmental exhibits is
"sustainability" because it involves choices, it can be applied
to numerous issues, and it lets visitors know that they can
have an impact on the state of the environment.
