I believe that some of the testing on borage honey a couple of years ago
found levels of sucrose up to 28%. Interestingly, the tests also found that
the highest levels were from borage grown in the North of England (the area
around Beverley), whilst that from the Midlands was (from memory!) in the
region of 11-12% and that from the South-East was only 2-3%. I have yet to
see any explanation for these variations.
