you will be interested in my dissertation titled "The Interpretation of Late 19th Century Faunal Remains Through the Analysis of Written Texts" available from UMI (proquest).  the work addresses issues of archaeological faunal analysis by examining historic documents, especially an analysis of menus.  the theoretical basis includes anthropological work by Mary Douglas and others and includes feasting theory ala Dietler and Hayden (Food & the Status Quest).   you will find some useful references in the bibliography.

by the way, the work questions the validity of some of the interpretations commonly presented in archaeological faunal analyses.
