There are a few good general books on Australian cottage gardens of
that period.  Authors Peter Cuffley and Victor Crittenden come to mind,
and I think both include species lists.  There are other general
historic garden books on the market as well, some of which look to be
well bedded in authentic detail.

Depending on the type of farm house and layout  it may be worth
accessing the Holtermann collection of goldfields photographs held by
the Mitchell Library, Sydney.  These can be found in the PICMAN search
thingie at State Library of NSW, and it works well and easily on the
Web.

Andrea Murphy did a BA Hons thesis at La Trobe Univ. which looked at
garden layouts using the Melbourne Board of Works detailed survey plans.
 Susan Lawrence would probably be able to help with access to that.
