I've dealt with these issues a bit...don't know if
there is anything more recent, but off the top of my
head--see Schulz and Gust 1983?, Lyman 1987, and
Huelsbeck 1991--I think all are articles in the SHA
Journal.
I think it's Lyman who deals with ENU (Estimated
Number of Beef Cut Units), and the others focus on
quality. In any case, they'll lead you to other
places...
