It is "night" soil because it was deposited at night.

I recall soldiers who returned from Korea jokingly referring to the
containers carried by farmers at night to fertilize the fields as "Honey
Buckets." This little bit of trivia is sure to get you a free beer at the SAA
Conference.

Speaking of trivia, did you ever wonder where the name "Elvis" (Elvis
Pressly) came from? Yesterday, I saw a photograph of a wagonload of Albanian
refugees and a couple were listed as named Elvis. Wow! Another beer trivia
point.
