The film you saw was 'Touts les matins du monde' about the French viola da
gambist, Sainte Colombe. The music was performed and arranged by Jordi
Saval and is available on the French label Astree Auvidis. The music of
Sainte Colombe has been published in a facsimile edition but I can't
remember who by. A good public music library should be able to trace the
edition through the catalogues of the British Library, Library of Congress,
Biblioteque Nationale in Paris.
The soundtrack music to films may be published if there is a perceived
interest in the material or hit songs/title music to be exploited
commercially. It's usually a case of the best tunes being extracted and
produced in easy piano arrangements but you lose all the effect and mystery
of the original impact from the screen. The Music Publishers Association
lists all new music in print including film soundtrack material, usually by
title of film.
Good luck.
