Hi Alex,
I'm going to put this thought out there. Video images in which visitors can see themselves are inherently interesting, and mirrors work pretty well too.  Whether or not it's IR is somewhat beside the point from the visitor perspective and attractiveness.  People typically focus on their own images no matter the form.

The Exploratorium has had some form of IR camera for 40 years, and lots of mythology about them is embedded in the lore of museums and learning.  Basically, they're cool gizmos, and can be used in many ways.  Whether or not they justify their cost is a whole other discussion.  Informal STEM will mostly likely not be revolutionized by there inclusion or absence, but there is that outside possibility of a sea change.  And who knows maybe there's a di Vinci developer out there who'll do it.  They likely to inspire some visitors and not others.
