Check with Joe O'Connell at Creative Machines. They are in Tucson, AZ.
They produce an air driven unit that is performing very well here.
They have also produced one for Adventure Science Center in Nashville.

Just wondering if anyone has or has seen a great hands-on, interactive
rocketry exhibit? We'd like to incorporate one into our new science center
and can't seem to find one that seems right. We're looking for just a
single exhibit that addresses the science behind the launch of the rocket.
We have a very cool space for it- a round silo in a historic feed mill (13'
in diameter and a height of 30'). Off the shelf or custom-designed ideas
are welcomed.
