I have also found some of the old Exploratorium stuff frustrating for the same reason:  surplus components no-longer available.   But many cities have folks who specialize in surplus electronics and other types of junk.  You can probably find someone with large magnets that can be used in a similar fashion.   You will have to find a way to mount them opposing each other and at the right distance to replicate the original exhibit.  It might be a bit smaller or larger and look different but still function the sam way.
