Generating curiosity is enough...because curiosity begets understanding.
People will learn (will construct their own learning) from the experience.
Explanations may help, but in the case of the Bernoulli Blower, they may get
in the way (there are better ways to explain what is happening than to evoke
Bernoulli, yet we all reach for Bernoulli like an antacid after the ASTC
banquet).
How many times after a hands-on experience does some adult express:
"That was fun, but when do they learn something?" The experience provides
the learning. The words may help (or may not) store that learning. But the
experience is memorable and evocative. The words are (probably) neither.
Anyone who wants to see a hundred written descriptions of the Bernoulli
effect can tap into Google. The role for exhibits is to generate that
demand.
