I've seen some great time lapse film of things like this. Doing it "live" would be awesome. There certainly would be some design challenges: ventilation, lighting, control of critters, etc.
But my favorite experiment was the unwrapped Twinkie I carted around for two years of school that refused to even grow the littlest bit of mold. ABSOLUTELY NO FOOD VALUE. I tried a slice of American cheese too but my roommate ate it after three weeks...
