I've had success using the NIH curricula as a launch point for
activities and discussions with middle and high school students about
risk: http://science.education.nih.gov/customers.nsf/WebPages/CSHome
The modules are designed for a lower age level than you will work with
but you might find some basic starting points.
Also, SEPUP curricula generally include introductory information about
risk and risk assessment. It depends on your audience and your topic.
