Hey, Julie, it seems like you should be able to use statistical  
modeling to solve this problem, as long as you don't need an exact  
count.   Gallup interviews a thousand people and then predicts who's  
going to win the next election.  You could do the same—interview a  
couple hundred representative visitors and then apply the ratio to  
total attendance.  You might have to do it anew each time you bring  
in a new exhibit since attendance ratios would likely change, but  
that would be true no matter what technique you use.
